There used to be some policies which gave you the option as to which illnesses you could insure for. So you could elect to be covered for cancer. But i think i am right in saying that those policies are no longer available.
All general critical illness policies insure the policyholder against cancer - but not all cancers! The precice wording of the cover varies between insurance companies but generally, none life threatening cancers are usually excluded. This is a difficult area and that is why i always advise anyone interested in buying critical illness cover to get advice.
